Some good stuff

Out of a WW book, last night I made a risotto with bruschetta on the side. It tasted like cardboard.

Seriously though….

Brushcetta was 4 pieces for 1.5 points *in total*. I made a mushroom and basil risotto which clocked in at 3.5 points per serve. So, we had a massively filling five point dinner. Yumbo.

Bruschetta is dead easy. Here’s the recipe:

Cut a 15cm breadstick into four pieces by cutting diagonal X-sections. Place on an oven tray, spray with cooking spray, and cook for 5 mins. Meanwhile mix 1 tsp minced garlice, 1/4 red onion (finely chopped), 1 tomato (finely chopped), 1/8 cup finely choppped basil leaves in a bowl. Take out the bread, invert, and spoon the mix onto the bread. Drizzle with balsamic vinegar.

yes, folks, this recipe is 1.5 points in total.

The risotto is even easier, but IDNR the recipe off the top of my head.

    perhaps you sould have used some other ingredients than just the WW book? I have found while paper mache risotto has the right consistency and has adequate fibre it doesnt taste very good.
